Click here to download This month is now showing hints of Spring: hedges and trees are starting to sprout buds, even some daffodils are appearing….and whilst it is not our most productive sewing and planting month, our peppers and tomatoes have already gone into the tunnels and large amounts of onions have been sewn into trays. Other mainstay crops will follow soon and the next issue will go into more detail on crop planting. A new Polytunnel is going up, to increase propagation and provide more planting room- see Goi’s update on this tunnel on p.5 ; recipes to use up our root veg before we move onto lighter recipes for Spring appear on p.10 and an article on our Pigs follows this. Irish Food Writers Guild

The Irish Food Writers Guild visited Cloughjordan today. Lunch in the Middle Country Co-op Cafe with a menu featuring over 11 local producers and beers from White Gypsy, a tour of the ecovillage, a visit to the Cloughjordan Community Farm, foraging with Wild Irish Foragers & Preservers, a trip to RiotRye bakehouse and bread school, a walk through the community apery, allotments and orchards, as well as an introduction to the research in the RED Gardens. The amazing Georgina and her 9 piglets! The perfect DIY pig she did it all herself no human interference! Well Samson the boar had a part in it as well!! These are pigs expressing their piggieness!!

Courgette

  This fresh summer soup is a lovely way of polishing off extra courgettes. It’s a good light lunch with bread and salad, and is especially excellent if you serve it with a generous dollop of tomato chutney in the middle of the bowl. Use Pecorino or any other substitute hard cheese in place of Parmesan if you are a vegetarian. Ingredients 3 tbsp olive oil 2 garlic cloves, finely chopped 6 or 7 courgettes, diced a handful of basil leaves 600ml hot chicken or vegetable stock 50ml cream, double or single parsley, chopped (optional) 50g Parmesan, grated salt & pepper Method Heat the oil in a large saucepan, then fry the garlic, courgettes and basil with a pinch of salt for about 10 minutes, until softened.  Find out all the latest farm news; Issue no. 3 June 2016 – Click here to read or download       Peppa grazing happily in her field, early June morning 2016 Photo: EB June: The heat and dry weather these past weeks has left us in no doubt that summer is definitely here and the kids, newly released from the confines of school, are looking forward to even more sun for their summer holidays… but on the Farm we hope for rain between the rays and moderately warm temperatures. After an unseasonably cold April/start of May where frost threatened plants very late in the season (we had them snuggling under fleeces even in the tunnels!) we headed straight into spectacularly hot weather and drought, where four times daily watering was necessary to keep the plants alive…we even had to water some field crops.
